There is an opinion that the classic marshmallow, as we know it today, is a complex confectionery product, for the production of which secret techniques and components are used. In fact, you will need very little time and a simple set of products:

  • granulated sugar - 250 grams;
  • gelatin - 1 tbsp;
  • vanilla sugar - 1-2 tsp;
  • citric acid - 5-7 grams;
  • baking soda - 1-2 grams;
  • water - 100 ml.

The process of preparing home-made marshmallows must be started by soaking the gelatin - swelling of the particles occurs within 30 minutes. If time is short, use instant gelatin. As an alternative, experienced chefs recommend taking agar-agar, which gives amazing tenderness - the finished marshmallow directly melts in your mouth.

In sugar, add 75 ml of water and put the sweet mixture on a small fire. Boil the syrup for no more than five minutes after boiling. At this time, you can prepare gelatin - pour dry powder with 25 ml of water, mix and leave until completely swollen.

When the syrup is boiled, it must be poured into a mixer bowl or other container, add the swollen gelatin and beat for ten minutes. Then add citric acid and beat the mass for another five minutes. At the last stage of preparation of marshmallows, add vanilla sugar and soda, and beat the mixture until a thick viscous consistency is formed - 10-15 minutes of continuous mixing are enough.

After cooking the sweet mass, you need to give it a "rest" for ten minutes. For forming marshmallows, you can use a pastry bag or a regular spoon. At room temperature, the confectionery freezes for about a day, but the process can be accelerated if you put the marshmallows in the refrigerator for 3-4 hours.
